Halloween Gingerbread Mummies

Have a go at making Gingerbread Mummies just in time for Halloween. This recipe is so easy that even the kids can help out!

125g Butter

100g Dark Muscovado Sugar

3.5 tbsp Golden Syrup

300g Plain Flour

1tsp Bicarbonate of Soda

2tsp Ground Ginger

1tsp Cinnamon

Icing (add water 1tsp at a time until you get a smooth icing)

1) Melt the butter, sugar and golden syrup in a pan over a medium heat being careful not to let the mixture burn.

2) In a separate bowl sieve the flour, then add the bicarbonate of soda, ground ginger and cinnamon. Add the butter, sugar and golden syrup mix to the dry ingredients in the bowl and combine with a wooden spoon until a stiff dough is formed.

83) Roll out the gingerbread on a lightly floured surface- thinner dough makes a more crunchy biscuit, thicker dough makes a softer biscuit. Using a gingerbread man cutter, cut out your shapes, re-rolling the dough when you run out of room.

74) Space the gingerbread men slightly apart on a baking tray lined with baking parchment. Bake in the centre of a preheated oven at 180°C for 10 minutes or until the gingerbread darkens.

655) Transfer to a wire rack to cool and harden completely. Place a cutting mat underneath the cooling rack and then drizzle with icing and pop a couple of currants on for eyes.
